Ingredients

Scale
  • 3 pounds russet potatoes (peeled and cubed)
  • 4 hard-boiled eggs (peeled and chopped)
  • 1 cup mayonnaise
  • 1/4 cup yellow mustard
  • 1/2 cup hamburger dill pickles (chopped)
  • 1/2 cup Vidalia onion (finely minced)
  • Kosher salt and ground black pepper to taste

Instructions

  1. Boil the peeled and cubed potatoes in salted water for about 10 minutes until tender but firm.
  2. Drain the potatoes and mash them gently in the pot about 3–4 times for a creamy texture.
  3. In a large bowl, combine mayonnaise, mustard, onion, pickles, pickle juice, hard-boiled eggs, salt, and pepper.
  4. Fold in the mashed potatoes gently to avoid breaking them apart too much.
  5. Garnish with paprika and refrigerate for at least an hour before serving.
