  • 6 yellow onions, thinly sliced
  • 8 cups beef stock
  • 1 cup dry red wine
  • 2 cups shredded Gruyère cheese
  • 3 tablespoons butter
  • 2 tablespoons olive oil

Instructions

  1. Season short ribs with salt and pepper. In a Dutch oven, heat olive oil over medium-high heat and brown the ribs on all sides. Remove and set aside.
  2. Add butter to the pot and caramelize the onions over low heat for 30-40 minutes until golden brown.
  3. Stir in minced garlic and deglaze with red wine, scraping up browned bits. Let reduce briefly.
  4. Return the short ribs to the pot, add beef stock, thyme, and bay leaves. Cover and simmer for 2.5 to 3 hours until meat is fork-tender.
  5. Meanwhile, toast baguette slices under a broiler, top with Gruyère cheese until melted.
