  • 16 ounces coleslaw mix
  • 15 ounces black beans, rinsed and drained
  • 1.5 cups canned corn kernels, drained
  • 1 medium jalapeño pepper, seeded and diced
  • 1 small red bell pepper, seeded and diced
  • 3 green onions, sliced
  • ¾ cup fresh cilantro, chopped
  • 9.75 ounces Chili Cheese Fritos
  • ¾ cup sour cream
  • ¾ cup mayonnaise
  • â…“ cup lime juice
  • 2 tablespoons chipotle sauce

Instructions

  1. In a large mixing bowl, combine coleslaw mix, black beans, corn, jalapeño, red bell pepper, green onions, cilantro, taco seasoning, and cumin. Toss well.
  2. In another bowl, whisk together sour cream, mayonnaise, lime juice, and chipotle sauce until smooth.
  3. Pour the dressing over the salad mixture and add most of the Fritos; gently stir to coat.
  4. Just before serving, top with reserved Fritos for added crunch.
