  • ½ cup granulated sugar
  • 8 ounces mascarpone cheese
  • 1 cup heavy cream
  • 1 ½ cups brewed espresso or strong coffee, cooled
  • 2 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 24 ladyfinger biscuits
  • 2 tablespoons unsweetened cocoa powder
  • Dark chocolate shavings (optional)

Instructions

  1. In a heatproof bowl over simmering water, whisk together egg yolks and sugar until pale and silky (about 5 minutes). Remove from heat and fold in mascarpone until smooth.
  2. In a separate bowl, whip cream to soft peaks and gently fold into the mascarpone mixture.
  3. Combine cooled espresso with sugar and vanilla extract. Dip ladyfingers briefly into the mixture.
  4. Layer soaked ladyfingers in a serving dish followed by half of the mascarpone cream. Repeat with another layer of ladyfingers and remaining cream.
  5. Cover and refrigerate for at least 4 hours or overnight. Dust with cocoa powder before serving.
