  • 1 cup quick-cooking grits
  • 8 ounces gouda cheese, freshly grated
  • 1 pound raw peeled and deveined shrimp
  • 4 tablespoons unsalted butter (divided)
  • 2 garlic cloves, minced
  • Spices: salt, pepper, smoked paprika, chipotle chili powder, ground cumin
  • Optional: grilled corn and chives for garnish

Instructions

  1. In a large pot, bring the chicken stock to a boil over medium-high heat. Gradually whisk in the grits, reduce heat to low, and stir until thickened (about 5 minutes). Remove from heat and mix in gouda cheese, butter, salt, and pepper.
  2. In a skillet over medium heat, melt 4 tablespoons of butter until lightly browned. Add minced garlic and sauté until fragrant (30 seconds). Season shrimp with spices then add to the skillet. Cook until shrimp are pink and opaque (3-5 minutes).
  3. Fold grilled corn into the grits. Serve topped with smoky shrimp and garnish with chives.
