  • ½ cup breadcrumbs

  • 2 tablespoons fresh parsley
  • 2 teaspoons dried oregano
  • 1 large egg
  • 1 cup orzo pasta
  • 2 cups chicken broth
  • Juice and zest of 2 lemons

Instructions

  1. Preheat the oven to 400°F (200°C). In a mixing bowl, combine ground chicken, breadcrumbs, egg, feta cheese, parsley, oregano, garlic, lemon zest, salt, and pepper. Mix until just combined.
  2. Shape the mixture into 1-inch balls and place them on a baking sheet lined with parchment paper. Drizzle with olive oil and bake for 20 minutes or until golden brown.
  3. In a pot, bring chicken broth to a boil. Add orzo pasta and cook according to package instructions until al dente (8–10 minutes). Drain if necessary.
  4. Stir in butter (or olive oil), lemon juice, lemon zest, minced garlic, salt, and pepper into the cooked orzo. Mix well.
