  • 1 medium zucchini, sliced
  • 1 medium red bell pepper, sliced
  • 1 medium yellow bell pepper, sliced
  • 1 medium red onion, sliced
  • 1 cup cherry tomatoes, halved
  • 2 tablespoons olive oil
  • 4 large whole wheat wraps
  • 1 cup hummus
  • Fresh spinach or arugula for layering
  • For the Zesty Herb Sauce: Greek yogurt, lemon juice, lemon zest, dill, parsley, garlic

Instructions

  1. Preheat the grill or grill pan over medium-high heat.
  2. In a large bowl, combine zucchini, red and yellow bell peppers, red onion, and cherry tomatoes. Drizzle with olive oil and season with salt and pepper. Toss to coat.
  3. Grill the vegetables for 5-7 minutes until tender and charred. Remove from heat.
  4. In a small mixing bowl, combine Greek yogurt, lemon juice, lemon zest, dill, parsley, minced garlic, salt, and pepper to make the Zesty Herb Sauce.
  5. On each whole wheat wrap, spread about 1/4 cup of hummus. Layer grilled vegetables and fresh spinach/arugula on top.
  6. Drizzle with Zesty Herb Sauce and roll up tightly. Slice in half and serve.
