  • 500 g fresh guavas (for compote)
  • 700 g cream cheese
  • 300 g Tennis biscuits (or graham crackers)
  • 250 g castor sugar
  • 4 large eggs
  • 200 ml whipping cream
  • 150 g unsalted butter (melted)

Instructions

  1. Preheat the oven to 160°C (320°F) and grease a springform pan.
  2. Crush the biscuits and mix with melted butter; press into the bottom of the pan.
  3. Cook chopped guavas with sugar and lime juice in a saucepan until thickened; let cool.
  4. Beat cream cheese and sugar until smooth, add eggs one at a time, then fold in whipping cream.
  5. Pour filling over the crust and bake for about 50 minutes or until slightly wobbly in the center.
  6. Cool gradually in the oven, then refrigerate for at least 4 hours before serving topped with guava compote.
