  • 2 tablespoons butter
  • 2 tablespoons flour
  • ⅔ cup Guinness stout
  • 1 ½ cups 2% milk
  • ½ cup half-and-half
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper
  • 1 tablespoon Dijon mustard
  • 2 ounces cream cheese (cut into pieces)
  • 3 ½ cups shredded sharp Irish cheddar (divided)
  • 1½ tablespoons butter
  • 2 teaspoons finely minced garlic
  • ½ cup panko breadcrumbs
  • salt/pepper to taste
  • 2 teaspoons minced fresh parsley

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente. Drain and set aside.
  2. In the same pot, melt butter over medium heat. Whisk in flour until golden.
  3. Gradually add Guinness and milk; stir continuously until smooth.
  4. Mix in half-and-half, salt, pepper, and mustard; cook until thickened.
  5. Remove from heat; stir in cream cheese and 3 cups cheddar until melted.
  6. Fold in cooked pasta until well combined.
  7. In a skillet, melt remaining butter and sauté garlic until fragrant; stir in panko breadcrumbs until golden.
  8. Top mac and cheese with remaining cheddar and garlic breadcrumbs before serving.
