Guinness and Irish Cheddar Macaroni and Cheese is a delectable twist on the beloved classic.   • 1 pound elbow macaroni
  • 2 tablespoons butter
  • 2 tablespoons flour
  • â…” cup Guinness stout
  • 1 ½ cups 2% milk
  • ½ cup half-and-half
  • 3 ½ cups shredded sharp Irish cheddar cheese (divided)
  • 1 tablespoon dijon mustard
  • 1½ tablespoons butter (for topping)
  • 2 teaspoons finely minced garlic
  • ½ cup panko breadcrumbs
  • Salt/Pepper to taste
  • 2 teaspoons minced fresh parsley

Instructions

  1. Cook elbow macaroni in salted boiling water until al dente. Drain and set aside.
  2. In the same pot, melt butter over medium heat. Whisk in flour for one minute.
  3. Gradually add Guinness, milk, half-and-half, salt, pepper, mustard, cream cheese, and two cups of cheddar; stir until smooth and thickened.
  4. Combine cooked macaroni with cheese sauce until well coated.
  5. In a skillet, melt additional butter and sauté minced garlic; mix in panko breadcrumbs until golden.
  6. Transfer macaroni mixture to a greased baking dish (optional), top with remaining cheddar and garlic breadcrumbs. Bake at 350°F for 15-20 minutes until bubbly.
