  • 400 g chicken (cut into small pieces)
  • 2 tablespoons olive oil
  • 4 flour tortillas
  • 1 cup shredded cheese (your choice)
  • 1/2 small onion (diced)
  • 1 red bell pepper (diced)
  • 1 green bell pepper (diced)
  • Spices: cumin, garlic powder, cayenne pepper, paprika, salt, and pepper

Instructions

  1. Preheat oven to 200°C (400°F).
  2. Heat 1 tablespoon of olive oil in a skillet over medium heat. Add chicken and spices; cook until fully done (5–7 minutes). Remove from heat.
  3. In the same skillet, add remaining olive oil and sauté onions until soft (about 3 minutes). Add garlic and bell peppers; cook until tender.
  4. On one half of each tortilla, layer chicken filling followed by sautéed veggies and cheese. Fold tortillas in half.
  5. Spray baking sheet with olive oil spray and arrange quesadillas on it. Bake for 10–12 minutes or until golden brown.
