  • 3 lb sweet potatoes, peeled and sliced (1/8-inch thick)
  • 1 1/2 cups heavy cream
  • 1/2 cup butter (1 stick)
  • 5 cloves garlic, minced
  • 1 tbsp fresh thyme, chopped
  • 1/3 cup fresh parmesan cheese, grated
  • Kosher salt and freshly cracked black pepper to taste

Instructions
