  • 3 lb chuck roast
  • 1/3 cup olive oil
  • 2 onions
  • 6 garlic cloves
  • 2 cups Guinness
  • 6 cups beef stock
  • 6 carrots
  • 3 potatoes
  • 2 cups mushrooms
  • 2 cups Bisquick
  • 2 cups cheddar cheese
  • chives
  • milk

Instructions

  1. Brown the meat in olive oil in a Dutch oven until golden.
  2. Sauté onions, garlic, carrots, celery, and mushrooms for about 5 minutes.
  3. Stir in tomato paste, thyme, rosemary, and black pepper. Pour in Guinness and scrape up browned bits.
  4. Add meat back with bay leaves and beef stock; bring to boil.
  5. Cover and simmer on low for approximately 3 hours.
  6. Mix dumpling ingredients in a bowl until combined.
  7. Drop spoonfuls of dumpling mixture into stew during the last 20 minutes of cooking without lifting the lid.
  8. Serve hot and enjoy!
