  • 1 cup all-purpose flour
  • 1 cup old-fashioned oats
  • 10 tablespoons unsalted butter
  • ½ cup light brown sugar
  • 1 can (14 oz) sweetened condensed milk
  • ¼ cup freshly squeezed lemon juice
  • 1 large egg yolk
  • 1/4 teaspoon salt
  • 3/4 teaspoon baking soda
  • 2 tablespoons sour cream (or plain yogurt)
  • 1 teaspoon pure vanilla extract
  • 1 tablespoon finely grated lemon zest

Instructions

  1. Preheat your oven to 350°F (175°C). Line an 8×8-inch baking pan with parchment paper.
  2. For the crust, combine flour, oats, salt, baking soda in one bowl and melted butter, brown sugar, and vanilla extract in another. Mix well and reserve ¾ cup for topping.
  3. Press the remaining mixture into the pan and bake for about 10 minutes until golden.
  4. In a separate bowl, whisk together sweetened condensed milk, sour cream, egg yolk, lemon juice, and zest until smooth.
  5. Pour the lemon filling over the baked crust and sprinkle reserved crumbs on top. Bake for another 17-20 minutes until golden brown.
  6. Cool completely before slicing into squares.
