  • 300 ml whole milk
  • 80 grams sugar
  • 7 grams active dry yeast
  • 500 grams bread flour or all-purpose flour
  • 1 teaspoon Kosher salt
  • 1 ½ teaspoons ground cinnamon
  • ½ teaspoon ground nutmeg
  • ¼ teaspoon ground cloves
  • 1 tablespoon orange zest
  • 2 large eggs
  • 70 grams unsalted butter (softened)
  • 140 grams dried currants or raisins

Instructions

  1. Heat the milk with part of the sugar until dissolved; cool to lukewarm.
  2. Bloom the yeast in the milk mixture for about ten minutes until foamy.
  3. In a stand mixer, combine flour, remaining sugar, salt, spices, and orange zest.
  4. Gradually mix in the milk and eggs; knead until a dough forms.
  5. Add softened butter gradually while kneading.
  6. Knead for three minutes; let rest for fifteen minutes.
  7. Incorporate currants into the dough; knead again for three minutes.
  8. Allow dough to rise in a covered bowl until doubled in size (1-2 hours).
  9. Shape into buns and place on a baking sheet; let rise again (30 min – 1 hour).
  10. Preheat oven to 375ºF; prepare flour paste for crosses.
  11. Pipe crosses onto risen buns; bake for 20-25 minutes until golden brown.
  12. Glaze with warm apricot jam after baking.
