  • 2 1/2 lbs ripe peaches (67 large)
  • 1/2 cup sugar
  • 2 tbsp cornstarch
  • 1/2 tsp grated orange zest
  • 1/4 cup freshly squeezed orange juice
  • 12 tbsp cold butter (for crust)
  • 3 cups all-purpose flour (for crust)

Instructions

  1. Prepare the pie crust by combining flour, salt, sugar, cold butter, and shortening in a food processor. Pulse until pea-sized pieces form.
  2. Gradually add ice water until the dough starts to come together. Chill for 30 minutes.
  3. Roll out half of the dough and place it in a pie dish. Trim excess dough.
  4. Preheat oven to 400°F and prepare the peach filling by mixing sliced peaches with sugar, cornstarch, orange zest, orange juice, and butter in a saucepan until thickened.
  5. Pour the filling into the crust and create a lattice top using the remaining dough.
  6. Bake for approximately 45 minutes until golden brown.
