  • 1.7 lb stewing lamb, cubed
  • 6 dried apricots
  • 1 cup canned tomatoes
  • 1 cup beef stock
  • 4 medium potatoes, cubed
  • 1/2 teaspoon cinnamon powder
  • 1 teaspoon dried oregano
  • 1/2 teaspoon chili flakes
  • 1 teaspoon paprika
  • 1 teaspoon mild curry powder

Instructions

  1. Sauté the onion and garlic in olive oil in the Instant Pot for about 3-4 minutes until softened.
  2. Add the diced lamb, salt, tomatoes, beef stock, and spices; stir well.
  3. Lock the lid and cook on High Pressure for 20 minutes. Allow natural pressure release for 2-3 minutes before quick-releasing remaining steam.
  4. Add potatoes and apricots; lock the lid again and cook on High Pressure for an additional 5 minutes. Release pressure naturally for 10-12 minutes before quick-releasing.
  5. Serve hot with your choice of rice or couscous.
