  • 1 cup all-purpose flour

  • 1 large egg
  • 0.5 cup unsalted butter
  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg yolk
  • 0.5 cup granulated sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine light brown sugar, kosher salt, and vanilla extract. Mix in melted butter and egg until blended.
  3. In another bowl, whisk together flour, cinnamon, nutmeg, and baking powder. Gradually add to the wet mixture, then fold in grated carrots.
  4. For the cream cheese swirl, beat softened cream cheese with granulated sugar and egg yolk until smooth.
  5. Pour half of the carrot cake batter into the pan, spread the cream cheese mixture evenly over it, then top with remaining batter and swirl gently.
  6. Bake for 30 minutes or until a toothpick comes out clean. Allow cooling before slicing.
