  • 1 cup freshly grated carrots
  • 4 ounces cream cheese (softened)
  • 1 large egg
  • 1 large egg yolk
  • 0.5 cup granulated sugar
  • 0.5 teaspoon kosher salt
  • 0.5 teaspoon ground nutmeg
  • 0.5 teaspoon baking powder
  • 1 teaspoon vanilla extract

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In a mixing bowl, combine light brown sugar, flour, salt, cinnamon, nutmeg, and baking powder.
  3. In another bowl, cream together unsalted butter, vanilla extract, and egg until smooth. Mix this into the dry ingredients.
  4. Fold in freshly grated carrots.
  5. In a separate bowl, beat cream cheese with granulated sugar and egg yolk until smooth.
  6. Pour half of the carrot cake batter into the prepared pan, dollop the cream cheese mixture over it, and top with remaining batter.
