  • 2 tablespoons jerk seasoning
  • 1 tablespoon olive oil
  • 1 mango, diced
  • 2 cups cabbage, shredded
  • 1 red bell pepper, sliced
  • 1/4 cup cilantro, chopped
  • 1/4 cup mayonnaise
  • 2 tablespoons honey
  • 1 lime, juiced
  • Salt and pepper, to taste

Instructions

  1. Preheat your grill to medium-high heat.
  2. Coat chicken thighs with jerk seasoning and olive oil.
  3. Grill chicken for 6-7 minutes on each side until fully cooked (165°F).
  4. In a bowl, combine diced mango, shredded cabbage, sliced red bell pepper, and chopped cilantro.
  5. Whisk together mayonnaise, honey, lime juice, salt, and pepper in a separate bowl for the dressing.
  6. Toss the slaw with the honey lime cream until well coated.
