  • 2 pounds boneless grass-fed lamb stew meat
  • 2 tsp kosher salt
  • ¼ tsp black pepper
  • 1 cup chopped onion
  • 6 cloves garlic, finely chopped
  • 2 tsp cumin
  • 14.5 oz can fire-roasted tomatoes
  • 4 cups vegetable broth
  • ⅓ cup chopped mint
  • 1 cup chopped parsley
  • Lemon wedges (optional)

Instructions

  1. Heat olive oil in a heavy-bottomed pot over medium-high heat. Add lamb, salt, and pepper; brown the meat.
  2. Reduce heat to medium, add onion and garlic; sauté until softened.
  3. Stir in cumin and cook until fragrant.
  4. Deglaze with fire-roasted tomatoes and vegetable broth.
  5. Mix in chopped mint and parsley; bring to a boil.
  6. Cover partially and simmer for about 60 minutes until lamb is tender.
  7. Serve hot with lemon wedges if desired.
