  • 6 cups chicken broth
  • 1 cup uncooked orzo

  • 2 medium carrots (peeled & chopped finely)
  • 1/2 medium onion (chopped)
  • 3 cloves garlic (minced)
  • 1 tablespoon lemon juice
  • Fresh parsley (for garnish)

Instructions

  1. In a large soup pot, sauté celery, carrots, and onion with butter and olive oil over medium-high heat for about 5-7 minutes.
  2. Add minced garlic and cook for an additional 30 seconds. Stir in flour, cooking for one minute while stirring constantly.
  3. Pour in chicken broth and add Italian seasoning along with the chicken breasts; bring to a boil.
  4. Reduce heat and simmer with the lid slightly open for about 15 minutes until the chicken is cooked through.
  5. Stir in uncooked orzo and cook another 10 minutes until tender, stirring frequently.
  6. Remove chicken, chop into bite-sized pieces, return to the pot along with lemon juice, parsley, salt, and pepper to taste. Serve hot.
