  • 5 large eggs
  • 1 cup granulated sugar
  • 1 ½ tsp vanilla extract
  • 1 cup all-purpose flour
  • 14 oz sweetened condensed milk
  • 12 oz evaporated milk
  • ½ cup heavy whipping cream (for soaking)
  • Fresh mango (for topping)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9×13 inch baking pan.
  2. In one bowl, beat egg yolks with half of the sugar until fluffy, then add vanilla and milk. In another bowl, combine flour, baking powder, and salt before mixing into the wet ingredients.
  3. Whip egg whites in a separate bowl until soft peaks form. Gradually add remaining sugar and continue whipping until stiff peaks form.
  4. Fold the whipped egg whites into the batter gently.
  5. Pour batter into the pan and bake for about 25 minutes or until golden and a toothpick comes out clean. Let it cool completely.
  6. Mix sweetened condensed milk, evaporated milk, and heavy cream in another bowl.
  7. Poke holes in the cooled cake and pour the milk mixture over it.
  8. For topping, whip cold heavy cream with powdered sugar and vanilla until stiff peaks form, then spread over the cake and garnish with fresh mango chunks.
