  • 4 boneless, skinless chicken breasts
  • 45 portions of pasta (spaghetti, linguine, or bucatini)
  • 1 cup chicken broth
  • 1/2 cup canned pumpkin purée
  • 1/2 cup heavy cream
  • 2 tbsp olive oil
  • 2 tbsp salted butter
  • 3 garlic cloves (minced)
  • Grated Parmesan cheese and mozzarella for topping

Instructions

  1. Season chicken breasts with salt and pepper. Heat olive oil in a skillet over medium heat and cook the chicken until golden brown (6-7 minutes per side). Remove and set aside.
  2. Cook pasta in salted boiling water until al dente; drain and set aside.
  3. In the same skillet, melt butter over medium heat. Sauté minced garlic until fragrant (about 30 seconds).
  4. Add chicken broth, thyme, sage, and red pepper flakes; stir well.
  5. Mix in pumpkin purée and heavy cream; let simmer for about 5 minutes until thickened.
  6. Combine cooked pasta with sauce, toss to coat, then slice chicken on top.
  7. Sprinkle with Parmesan and mozzarella before serving.
