  • 1 tablespoon mild tasting oil
  • 1/4 cup mayonnaise
  • 1 teaspoon chili powder
  • 1/2 cup cotija cheese (crumbled)
  • 1/3 cup fresh cilantro
  • Lime wedges

Instructions

  1. Preheat your grill to medium heat.
  2. Trim the leaves off the cauliflower and cut it into four thick steaks.
  3. Brush both sides of the cauliflower steaks with oil.
  4. Grill the steaks for 5-6 minutes on each side until charred.
  5. Check tenderness; if needed, move to indirect heat for another 10 minutes.
  6. Remove from heat and brush with mayonnaise.
  7. Sprinkle chili powder, crumbled cotija cheese, and cilantro over each steak.
