  • 1 cup plain full-fat Greek yogurt
  • ¼ cup unsalted butter (melted and slightly cooled)
  • 2 eggs
  • ½ cup maple syrup
  • 1½ cups all-purpose flour
  • 1 cup mini chocolate chips

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a mini muffin pan with nonstick spray.
  2. In a mixing bowl, whisk together flour, baking powder, baking soda, and salt.
  3. In another bowl, mix Greek yogurt, maple syrup, melted butter, and vanilla extract until smooth. Add eggs one at a time.
  4. Slowly combine dry ingredients with the wet mixture using a rubber spatula until just mixed; don’t overmix.
  5. Gently fold in mini chocolate chips.
  6. Fill muffin cups evenly with batter and top with additional chocolate chips if desired.
  7. Bake for 12–14 minutes or until a toothpick comes out clean.
  8. Let cool in the pan for 2-3 minutes before transferring to a wire rack.
