  • 6 small crisp ripe peaches, pitted and quartered
  • 1 sprig rosemary
  • 3 sprigs thyme
  • 1 cup white balsamic vinegar
  • 1/2 cup white vinegar
  • 1 cup water
  • 2 teaspoons kosher salt
  • 2 tablespoons honey
  • 8 oz mozzarella pearls
  • 4 oz prosciutto
  • 12 basil leaves
  • 12 cocktail skewers
  • 3 tablespoons pickling liquid
  • 1/4 cup olive oil
  • 2 cloves garlic, minced
  • herbs from pickling liquid, minced
  • salt and pepper to taste

Instructions

  1. Prepare pickling liquid by heating white balsamic vinegar, water, salt, and honey until dissolved.
  2. Pour the mixture over quartered peaches in a jar; let sit for 30 minutes.
  3. Assemble skewers by wrapping each peach slice with prosciutto and threading onto skewers with mozzarella and basil.
  4. Drizzle with dressing made from reserved pickling liquid, olive oil, minced garlic, and herbs before serving.
