  • 5 cups peaches (peeled and finely diced)
  • 2 tbsp. lemon juice
  • 3 cups unbleached all-purpose flour
  • 1 cup granulated sugar
  • 1 cup unsalted butter (cold)
  • 1 large egg (lightly beaten)
  • Spices: cinnamon and nutmeg

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a mixing bowl, combine diced peaches, lemon juice, flour, cornstarch, sugar, salt, cinnamon, and nutmeg. Stir well.
  3. In another bowl, mix flour, sugar, baking powder, salt, and cinnamon. Cut in cold butter until crumbly.
  4. Press half of the mixture into a greased baking dish. Spread peach filling evenly on top and sprinkle remaining crust over it.
  5. Bake for about 60 minutes until golden brown. Let cool before slicing into bars.
