  • 1 lb large shrimp, peeled and deveined
  • 8 oz mushrooms, sliced
  • 2 tablespoons olive oil

  • 1 cup fresh basil pesto
  • ¼ cup grated Parmesan cheese
  • 2 tablespoons lemon juice

Instructions

  1. Cook the pasta: In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Reserve ½ cup of pasta water before draining.
  2. Sauté shrimp and mushrooms: In a skillet, heat olive oil over medium heat. Add minced garlic and sauté for about 30 seconds until fragrant. Then add sliced mushrooms and cook until tender. Add shrimp, season with salt, pepper, and red pepper flakes (if using), cooking until pink (3–4 minutes).
  3. Combine ingredients: Lower the heat; add the cooked pasta to the skillet with shrimp and mushrooms. Stir in basil pesto and reserved pasta water as needed for consistency. Finish with lemon juice and grated Parmesan cheese.
