  • 1 cup pineapple, cubed
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 teaspoon ginger, grated
  • 1 cup jasmine rice
  • 2 cups chicken broth
  • 1 tablespoon soy sauce
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large skillet over medium heat. Add cubed chicken; cook until golden brown and cooked through. Remove and set aside.
  2. In the same skillet, sauté onion, garlic, and red bell pepper until softened.
  3. Stir in pineapple; cook for an additional 2 minutes.
  4. Add jasmine rice, chicken broth, soy sauce, ginger, salt, and pepper; bring to a boil.
  5. Reduce heat to low, cover, and simmer for 18-20 minutes or until rice is cooked.
  6. Return the chicken to the skillet; mix well to combine all ingredients.
  7. Garnish with green onions and sesame seeds before serving.
