  • 2 tbsp olive oil
  • 2 cloves garlic (minced)
  • 1/2 cup low-sodium soy sauce
  • 1/3 cup pineapple juice
  • 2 tbsp honey or brown sugar
  • 1 tbsp rice vinegar
  • 1.5 cups cooked rice (white or brown)
  • 1 cup pineapple chunks (fresh or canned)
  • 1/2 red bell pepper (diced)
  • Green onions and sesame seeds for garnish

Instructions

  1. Prepare all ingredients by chopping vegetables and mincing garlic.
  2. Heat olive oil in a skillet over medium-high heat, then sauté chicken until browned on both sides. Remove from skillet.
  3. In the same skillet, sauté garlic and red bell pepper until fragrant.
  4. Mix soy sauce, pineapple juice, honey, vinegar, cornstarch mixture, and water in a bowl. Pour into the skillet and stir well.
  5. Return chicken to the skillet along with cooked rice and pineapple chunks. Stir to combine.
  6. Reduce heat to low and simmer for about 5-7 minutes until heated through.
