  • 2 1/4 teaspoons active dry yeast
  • 4 cups all-purpose flour
  • 1 tablespoon granulated sugar
  • 2 teaspoons salt
  • 4 tablespoons unsalted butter (melted)
  • 8 cups water (for boiling)
  • 1/2 cup baking soda
  • 1 large egg yolk (for egg wash)
  • Coarse salt (for topping)

Instructions

  1. Activate the yeast by combining it with 1 cup of lukewarm water in a small bowl; let sit until frothy (about 10 minutes).
  2. In a large mixing bowl or stand mixer, combine flour, sugar, and salt. Mix in the yeast mixture and melted butter, adding the remaining water gradually to form a soft dough.
  3. Knead on a floured surface until smooth and elastic. Place in a greased bowl, cover, and let rise until doubled (1-2 hours).
  4. Preheat the oven to 450ËšF (230ËšC) and line a baking sheet with parchment paper.
  5. Divide dough into two pieces, shape into ovals, and allow to rest for 30 minutes.
  6. Boil water mixed with baking soda; gently place each loaf into boiling water for 30 seconds before removing.
  7. Brush loaves with egg wash, sprinkle salt on top, and slash the surfaces before baking for 15-20 minutes until deep brown.
