  • 2 1/4 cups fresh pitted cherries
  • 3 tablespoons sugar (for filling)
  • 2 tablespoons cornflour

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, combine flour, granulated sugar, baking powder, and salt.
  3. Cut in the chilled butter until the mixture resembles coarse crumbs.
  4. Stir in the beaten egg and milk until just combined.
  5. In another bowl, mix cherries with sugar and cornflour until coated.
  6. Press half of the crust mixture into an 8×8 inch baking dish. Spread cherry filling over it and crumble the remaining crust on top.
  7. Bake for about 32 minutes or until golden brown. Allow to cool before serving.
