  • 2 racks of lamb (about 3 pounds), frenched
  • 1½ teaspoons kosher salt
  • 1 teaspoon freshly cracked black pepper
  • 6 garlic cloves, grated
  • ¼ cup finely chopped fresh flat-leaf parsley
  • 1 tablespoon finely chopped fresh rosemary
  • 3 tablespoons extra-virgin olive oil
  • 1 tablespoon vegetable oil

Instructions

  1. Preheat your oven to 350°F.
  2. Pat the lamb dry and season all sides with salt and pepper.
  3. Combine garlic, parsley, rosemary, olive oil, and remaining salt/pepper in a bowl to create herb oil.
  4. Heat a heavy-bottom skillet over high heat, add vegetable oil, and sear the lamb racks until browned on all sides.
  5. Brush the herb oil mixture over the seared racks and place them on a rimmed baking sheet.
  6. Roast in the preheated oven for about 15 minutes or until an internal temperature of 125°F is reached.
  7. Let rest for 10 minutes before carving into chops.
