Rainbow Orzo Salad is a vibrant, refreshing dish bursting with flavors and colors that make every bite a delight. This easy-to-make salad is perfect for summer BBQs, potlucks, or as a light lunch on warm days.

  • 1/4 cup extra virgin olive oil
  • 2 tablespoons red wine vinegar
  • 1 tablespoon lemon juice
  • 1 teaspoon honey
  • 1 clove garlic, minced
  • 1/2 teaspoon Italian seasoning
  • Salt and pepper to taste
  • 1 1/2 cups uncooked orzo pasta
  • 1 cup cherry tomatoes, quartered
  • 1/2 orange bell pepper, diced
  • 1/2 yellow bell pepper, diced
  • 1 cup diced cucumber
  • Optional: 1/4 cup chopped red onion
  • Optional: 1/4 cup crumbled feta cheese

Instructions

  1. Cook the orzo: Boil salted water in a large pot and cook the orzo until al dente. Drain and rinse under cold water.
  2. Prepare the dressing: Whisk together olive oil, red wine vinegar, lemon juice, honey, garlic, Italian seasoning, salt, and pepper in a bowl.
  3. Combine ingredients: In a large mixing bowl, add cooked orzo along with cherry tomatoes, bell peppers, cucumber, optional red onion, feta cheese (if using), and fresh basil.
  4. Dress the salad: Pour the dressing over the salad and toss gently to combine. Season with additional salt and pepper as needed.
  5. Serve or store: Enjoy immediately or refrigerate in an airtight container for up to three days.
