  • 6 oz white chocolate melting wafers
  • 3 oz heavy cream
  • 8 oz dark chocolate melting wafers
  • Extra freeze-dried raspberries for decoration

Instructions

  1. In a food processor, grind freeze-dried raspberries into a fine powder. Combine with white chocolate melting wafers in a bowl.
  2. Heat heavy cream in a saucepan until simmering and pour over the white chocolate mixture. Let sit for a few minutes before stirring until smooth.
  3. Refrigerate the filling for 45 minutes to an hour. Once chilled, scoop out portions and roll into balls.
  4. Melt the dark chocolate in a heatproof bowl over simmering water, then dip each truffle to coat completely.
  5. Decorate with additional melted chocolate and crushed freeze-dried raspberries before chilling again for 30 minutes.
