  • 8 ounces ricotta cheese
  • 1 crusty bread loaf
  • 1 bunch fresh basil
  • 3 tablespoons olive oil (divided)
  • 4 minced garlic cloves (divided)
  • Balsamic glaze
  • Salt/Black Pepper

Instructions

  1. Preheat the oven to 400°F.
  2. Toss cherry tomatoes with olive oil, minced garlic, salt, and pepper in a baking dish. Roast for about 20 minutes until slightly burst. Let cool.
  3. In a blender, combine ricotta, garlic, olive oil, half the basil, salt, and pepper; blend until smooth.
  4. Slice the bread and brush with garlic oil mixture before toasting in the oven until golden brown (10-12 minutes).
  5. Spread ricotta on toasted bread slices, top with roasted tomatoes and remaining basil, then drizzle with balsamic glaze.
