  • 2 lbs baby potatoes
  • 3 tbsp olive oil
  • 1 tbsp lemon zest
  • 2 tbsp lemon juice
  • 1 tsp dried oregano
  • 2 tbsp fresh parsley
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 200°C (400°F).
  2. Rinse the baby potatoes under cold water and cut them in half or quarters if larger.
  3. In a mixing bowl, toss the potatoes with olive oil, salt, and pepper until well coated.
  4. Spread the potatoes on a baking sheet and roast for 25–30 minutes, stirring halfway through until golden brown and tender.
  5. In another bowl, mix together lemon zest, lemon juice, dried oregano, and fresh parsley.
  6. Once the potatoes are done roasting, combine them with the dressing in the bowl and toss gently to coat.
  7. Serve warm or chilled.
