  • 9 Roma tomatoes (sliced lengthwise)
  • 3 tbsp extra virgin olive oil
  • 1 yellow onion (diced)
  • 4 garlic cloves (minced)
  • 1 can (28 oz) crushed San Marzano tomatoes
  • 1 cup fresh basil (roughly chopped)
  • 2 cups chicken stock
  • 2/3 cup heavy cream
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 375°F.
  2. Spread sliced Roma tomatoes on a baking sheet, drizzle with olive oil, and season with salt and pepper. Roast for about 1 hour.
  3. In a large pot, heat olive oil and sauté diced onion for approximately 5 minutes until softened.
  4. Add minced garlic and thyme; cook until fragrant.
  5. Stir in crushed tomatoes, chopped basil, and sugar; let simmer for 10 minutes.
  6. Add roasted tomatoes and chicken stock; simmer for another 30 minutes.
  7. Blend the mixture until smooth using an immersion blender.
  8. Stir in heavy cream and adjust seasoning as needed before serving.
