  • 1 1/2 cups all-purpose flour
  • 1/2 tsp salt
  • 1 1/2 sticks unsalted butter (very cold)
  • 1/3 cup ice-cold water
  • 1 1/2 lbs peaches (sliced)
  • 1/4 cup sugar
  • 1 Tbsp lime juice
  • 2 Tbsp cornstarch
  • 1 egg (for egg wash)
  • Apricot preserves (for glaze)

Instructions

  1. Prepare the crust by mixing flour, salt, and cold butter in a food processor until pea-sized. Gradually add ice-cold water to form a dough. Chill for at least 45 minutes.
  2. Preheat oven to 425°F. Roll out the chilled dough on a floured surface to about 14–16 inches in diameter and transfer it to a parchment-lined baking sheet.
  3. Toss sliced peaches with sugar, lime juice, cornstarch, and salt. Spoon filling onto the crust center, leaving a two-inch border. Fold edges over filling and brush with egg wash.
  4. Bake for approximately 40–45 minutes until golden brown and bubbly.
  5. Brush baked tart with apricot glaze and allow to cool slightly before serving.
