  • 100 g powdered sugar
  • 76 g egg whites (approximately 1/4 cup)
  • 100 g granulated sugar
  • 100 g white chocolate chips
  • 120 ml heavy cream
  • 50 g salted butter caramel
  • 1 tsp vanilla extract

Instructions

  1. Preheat your oven to 150°C (300°F) and line two baking sheets with parchment paper.
  2. Sift together almond flour and powdered sugar in a bowl.
  3. In another bowl, beat egg whites until soft peaks form, gradually adding granulated sugar until stiff peaks form.
  4. Gently fold the dry ingredients into the egg whites until fully combined.
  5. Pipe small circles onto the prepared baking sheets and let them rest for 30 minutes before baking.
  6. Bake for about 15 minutes until firm to touch; cool completely.
  7. For the filling, melt salted butter caramel with water over medium heat, then stir in heavy cream and white chocolate until smooth. Let cool slightly before assembling.
