  • 1/2 cup white sugar
  • 1/4 cup light or dark brown sugar
  • 1/2 cup canned pumpkin puree
  • 1/4 cup neutral oil (canola)
  • 1 tsp vanilla extract
  • 3/4 cup all-purpose flour
  • 1/2 tsp baking powder
  • 1/8 tsp baking soda
  • 1 1/2 tsp pumpkin pie spice
  • 1/4 tsp salt
  • Cinnamon-sugar mixture (2 to 3 tbsp)

Instructions

  1. Preheat your oven to 350°F (175°C) and grease mini loaf pans.
  2. In a mixing bowl, whisk together the egg, white sugar, and brown sugar until smooth. Add pumpkin puree, oil, and vanilla extract; mix well.
  3. In another bowl, combine flour, baking powder, baking soda, pumpkin pie spice, and salt. Gradually add to the wet ingredients, stirring until just combined.
  4. Pour half of the batter into each loaf pan and sprinkle half of the cinnamon-sugar mixture on top. Add the remaining batter and finish with the rest of the cinnamon-sugar mixture.
  5. Bake for about 20 minutes or until a toothpick inserted comes out clean.
