  • 3 lb corned beef brisket with spice packet
  • 3 cups low-sodium beef broth
  • 1 large yellow onion, quartered
  • 2 medium carrots, cut into chunks
  • 12 small red potatoes
  • ½ head green cabbage, cut into wedges

Instructions

  1. Place the corned beef in the slow cooker, fat side up, and sprinkle the spice packet over it.
  2. Add the beef broth around the corned beef. Cover and cook on low for 5 hours.
  3. After 5 hours, add onions, carrots, and potatoes. Cover again and cook on low for an additional hour.
  4. Add cabbage on top of the mixture, cover once more, and cook for another 2 hours.
  5. Once done, remove the corned beef to a cutting board and let rest for 5 minutes before slicing against the grain into thin slices.
  6. Use a slotted spoon to serve vegetables alongside the sliced corned beef.
