  • 1 onion (diced)
  • 2 ribs celery (diced)
  • 6 cloves garlic (minced)
  • 1.5 lb Idaho potatoes
  • 4 cups unsalted chicken broth
  • 1 Tablespoon dried parsley
  • Salt and pepper
  • 4 Tablespoons butter
  • 1/3 cup flour
  • 1.5 cups milk
  • 2 cups shredded sharp cheddar cheese
  • 1/2 cup sour cream
  • Chopped chives and additional cheddar cheese for garnish

Instructions

  1. Cook bacon until crispy, crumble half, and add to the slow cooker.
  2. Dice potatoes, onion, celery, and mince garlic; combine in the slow cooker with remaining bacon.
  3. Pour in chicken broth and season with parsley, salt, and pepper.
  4. Cover and cook on low for 8 hours or high for 4 hours.
  5. Mash some potatoes after cooking for desired texture.
  6. In a skillet, melt butter; whisk in flour, then gradually add milk until thickened.
  7. Stir in cheese and sour cream; mix into soup base before serving.
  8. Serve hot topped with reserved bacon, cheese, and chives.
