Instructions

  1. Preheat your oven to 350°F (175°C) and line a cookie sheet with parchment paper.
  2. In a large bowl, use an electric mixer to beat softened butter until creamy. Add sugar, baking powder, baking soda, salt, cinnamon, and pumpkin pie spice; mix well.
  3. Incorporate egg and vanilla extract, then blend in the pumpkin puree until fully combined.
  4. Gradually add flour on low speed until just mixed; the dough will be slightly wet.
  5. Drop spoonfuls of dough onto the prepared cookie sheet, spacing them apart. Bake for 10-12 minutes until set. Cool on the sheet for a few minutes before transferring to a wire rack.
  6. For frosting, beat softened butter and cream cheese together; add powdered sugar and vanilla until creamy.
