  • 3/4 cup sour cream
  • 1/4 cup plain Greek yogurt
  • 1/2 cup red onion (minced)
  • 1 shallot (sliced)
  • 1 1/2 tsp onion powder
  • 1 tsp garlic powder
  • 2 tsp kosher salt
  • 1/2 tsp black pepper
  • 2 tsp apple cider vinegar
  • 1/3 cup fresh chives (chopped)

Instructions

  1. Boil the potatoes in salted water for 15-18 minutes until fork-tender. Drain and let cool.
  2. Slice the cooled potatoes into halves or quarters.
  3. In a mixing bowl, combine sour cream, Greek yogurt, minced red onion, sliced shallot, onion powder, garlic powder, apple cider vinegar, salt, and pepper to create the dressing.
