  • 2 pounds russet potatoes
  • 1 tablespoon kosher salt
  • 2 tablespoons apple cider vinegar
  • ½ cup mayonnaise
  • ¼ cup sweet pickle relish
  • 2 teaspoons yellow mustard
  • ½ teaspoon black pepper
  • ½ teaspoon garlic powder
  • ½ cup celery (diced)
  • 2 tablespoons diced red onion
  • 2 large hardboiled eggs (diced)
  • Smoked paprika for garnish

Instructions

  1. Peel and dice the potatoes into ¾-inch cubes. Place in a large saucepan and cover with cold water.
  2. Bring water to a boil over high heat, add 1 tablespoon salt, and simmer until fork-tender (about 8 to 10 minutes). Drain and let cool slightly.
  3. In a large bowl, combine the warm potatoes with apple cider vinegar and stir gently. Allow to marinate for 20 minutes.
  4. In a separate bowl, whisk together mayonnaise, relish, mustard, remaining salt, black pepper, and garlic powder until smooth.
  5. Add the dressing to the marinated potatoes along with celery, onions, and chopped eggs. Mix well and adjust seasoning as needed.
  6. Cover and refrigerate for at least one hour before serving. Garnish with smoked paprika.
