  • 12 hard-boiled eggs
  • 2 tbsp mayonnaise
  • 1 ½ tbsp dill pickle relish
  • 2 tsp yellow mustard
  • 11 ½ tsp Cajun seasoning
  • 23 dashes hot sauce
  • 1 ½ cups flour
  • 2 large eggs, beaten
  • 2 cups Panko breadcrumbs
  • 2 ½ tsp gumbo file powder
  • Salt & pepper, to taste

Instructions

  1. In a mixing bowl, remove yolks from hard-boiled eggs and combine with mayonnaise, relish, mustard, Cajun seasoning, and hot sauce. Mix until smooth.
  2. Spoon or pipe the mixture back into egg whites.
  3. Preheat oven to 375°F (190°C). Prepare three bowls: one with flour, one with beaten eggs, and one with Panko breadcrumbs mixed with gumbo file powder.
  4. Coat each filled egg half in flour, dip in beaten eggs, then roll in Panko until fully coated.
  5. Arrange on a baking sheet and bake for 15-20 minutes until golden brown and crispy. Serve warm or at room temperature.
