  • 6 garlic cloves (minced)
  • 1 pound Cremini mushrooms (cleaned and sliced)
  • 2ÂĽ cups half-and-half (or single cream)
  • 1 pound pasta (your choice)
  • 8 oz spinach
  • 1 cup freshly grated Parmesan cheese
  • Salt and pepper to taste

Instructions

  1. Boil a large pot of salted water and cook pasta until just under al dente.
  2. In a deep skillet, heat olive oil over medium heat. Sauté minced garlic until fragrant.
  3. Add sliced mushrooms, seasoning with salt and pepper, cooking until golden brown.
  4. Stir in spinach until wilted.
  5. Pour in half-and-half; bring to a gentle boil, then simmer for about 4 minutes.
  6. Combine drained pasta with the sauce, adding chopped parsley and Parmesan cheese.
  7. Adjust sauce consistency with reserved pasta water if needed.
  8. Season to taste and serve immediately.
