  • 1 cup vanilla yogurt
  • 1 tablespoon honey
  • 2 eggs
  • 3 tablespoons sugar
  • 1 teaspoon vanilla extract
  • 3 eggs (for curd)
  • 1/2 cup lemon juice (for curd)
  • 1 cup sugar (for curd)
  • 1/4 cup lemon zest (about 2 lemons)
  • 6 tablespoons unsalted butter, cubed
  • Pinch of coarse salt

Instructions

  1. Prepare the pie crust by combining flour, salt, sugar, butter, vanilla extract, and cold water in a food processor until it resembles coarse crumbs. Chill the dough for at least 30 minutes.
  2. Preheat the oven to 375°F (190°C). Roll out the chilled dough and fit it into tart pans.
  3. Bake the crust for about 15 minutes until golden brown. Let cool.
  4. Whisk together yogurt, honey, eggs, sugar, and vanilla in a bowl. Pour into cooled tart shells and bake for another 25 minutes until set.
  5. For the lemon curd, whisk eggs, lemon juice, sugar, zest, butter, and salt over medium heat until thickened. Strain if desired.
  6. Once cooled, top tarts with sliced strawberries and drizzle with lemon curd before serving.
